Gluten-Free Green Bean Casserole

  1. Fry the bacon, remove from the pan, then cook the celery, garlic and mushrooms in the bacon grease with 1 T butter until the celery is soft. Add the chicken broth, dried onion and thyme, and continue cooking 4 minutes. Season to taste.
  2. Combine the beans and the celery mixture in a 1-1/2 qt baking dish, then stir in 3/4 C of the cheese, the sour cream, and half the bacon. Sprinkle the remaining cheese and bacon on top, garnish with the pork rinds, and bake at 350 for 15 minutes.
  3. Plate and serve hot.
